This is a great-tasting healthy chilli con carne recipe with around 365 calories per serving (this quantity should make six servings). It is well worth giving this one recipe a shot if you are watching your figure or dieting for weight loss and would like to get stuck into a healthy chilli!
Ingredients:
500g of lean minced beef
1 red onion
800ml tinned chopped tomatoes
2 tbsp. of cumin
1 ½ tbsp. of chilli powder
1 crushed garlic or 1 tbsp. of garlic powder
1/8 tbsp. of cayenne pepper
400ml tin of red kidney beans
2 celery stalks
2 red peppers
125ml vegetable stock
1 tbsp. of jalapeno pepper
250ml tomato ketchup
Pinch of sugar
1 sprig of coriander
1 spring onion
Salt and ground black pepper.
Preparation for healthy chilli con carne recipe:
Heat the minced beef in a large deep pot over a high heat, stir regularly to turn brown and break up any lumps.
When brown, transfer to a sieve to drain away the excess fat.
Finley chop the red onion, celery, red pepper and jalapeno, and then put into the pot and gently heat until soft. Make sure the celery is soft and turning slightly golden.
Add the vegetable stock until it is reduced by 3/4, and then add the tomatoes and the ketchup.
Return the minced beef to the pot and add the tomatoes, spices and sugar. Bring to the boil, and then cover the pot with the lid and reduce the heat so the chilli can simmer for 45 minutes; drain the liquid from the beans and add the beans to the pot and cook for a further 20 minutes.
Remove from the heat; add the garnish of chopped coriander, spring onion and serve.
